Over the past year, the production of soft drinks in Russia has increased by 6% to 19.8 billion liters. Manufacturers have built new trade links and started purchasing missing ingredients in the CIS countries, in particular, in Uzbekistan and Armenia. The recipes for some drinks have also been changed. At the same time, the departure of foreign companies from the market has given domestic producers the opportunity to occupy the vacated niche by increasing production volumes and expanding the range.
The demand for plant-based food and drinks is growing by 20% per year. According to estimates by the Union of Plant-Based Product Manufacturers, 55% of the market for such products in Russia is occupied by milk alternatives; it is this segment that shows the most impressive dynamics. If the production of plant-based drinks in 2019 amounted to 8.5 thousand liters, then in 2020 it was already 24 thousand liters. Experts note that the growth of the alternative products segment is a global trend.
Over the past few years, the production of alcoholic beverages in Russia has changed little. Domestic consumption, along with brand stocks, has become one of the driving factors. Dynamics are observed in relation to the shares in the consumption structure of individual types of drinks. Alcohol production in the country increased by 2.1% mainly due to an increase in the production of beer and beer drinks, the introduction of new varieties of soft lager, which is especially popular among young people, to the market.
Due to the suspension of activities of a number of foreign companies, Russian producers of alcoholic beverages were able to expand their product range, which gave an additional impetus to the development potential of the industry. At the same time, there are difficulties with the purchase of imported raw materials and equipment. The solution to these problems lies in the establishment of new supply channels and work with domestic equipment manufacturers.
The production of all types of packaged water increased by 28% over the year, and mineral waters — by 70%, with 98.6% of the market covered by domestic production. The demand for packaged water is growing annually. Consumers have become more demanding of water quality. Sales in stores increased by 11.2%, and remotely — by 13.8%. «Draft» water remains less in demand: sales through vending machines decreased by 0.6% and still occupy only 0.04% of the market.

Economic justification
In the production of lemonades, the plant uses blended syrups, which include sugar syrup, natural fruit and berry, concentrated juices or their extracts, acids, dyes and aromatic substances. When adding water-soluble additives and fruit and berry extracts, mechanical impurities get into the blend, which is why the finished syrup turns out cloudy, and the stability of the prepared drinks decreases. When rejecting 3 tons of lemonade, the losses will amount to 3,000 l X 0.4 € = 1,200 € per day.
